Orange Hazelnut Omelette
6 eggs
pinch salt
3 tsp sugar
1 tsp grated orange rind
2 tbsp single cream
50g butter
filling:
3-4 oranges
50g hazelnuts, finely chopped
1 Beat the eggs with salt, sugar, orange rind and cream.
2 Cut the segments from the oranges, discard the pips, skin and any pith. Mix oranges with the nuts.
3 Heat the butter in a large omelette pan, pour in the eggs and cook.
4 When the eggs are set to personal taste, add filling, fold the omelette and serve.
