Orange Almond Biscotti
2 eggs
155g light soft brown sugar
90g plain flour
125g self raising flour
125g almonds with skin for texture
1/4 tsp cardamon, grounded
1 tbsp orange zest
1 Mix eggs and brown sugar until light and fluffy
2 Mix all ingredients together, add mixture from eggs and sugar and keep mixing until it all comes together
3 Dust surface with flour and make two flat log shapes ( make sure your hands are really floury, makes it easier to work with dough )
4 Place it on baking paper and bake on 160C for 35-40 minutes or until lightly golden on the top.
5 Slice them and put them back on a baking tray. Bake for additional 10-15 minutes, flipping them over on a half way
