Spanish Rice Salad
100g/ 4oz/ long-grain rice
salt and pepper
2 cloves garlic, crushed
6 tbsp mayonnaise
1 Spanish onion, finely diced
1 red pepper, cored, deseeded and neatly diced
1 green pepper, cored, desseeded and neatly diced
12 stuffed olives, sliced
3 tomatoes, skinned and sliced
1 lettuce, shredded
1 Cook the rice in salted water, rinse in boiling water, then drain well.
2 Blend the hot rice with garlic, mayonnaise and onion. Allow to cool then add the peppers, olives and tomatoes, season well.
3 Put on to a bed of lettuce.
