Filled Potato Dumplings - Czech Republic

INGREDIENTS:
Filled Potato Dumplings - Czech Republic - Recipe
Dough:
750g boiled potatoes
350g wholegrain flour
2 eggs
3-4 tsp baking powder                     

Filling:
250g bacon
30g fat
1/2 big onion
1 tsp breadcrumbs

salt and pepper to taste

1 Mix boiled, cold, grated potatoes with flour, baking powder, salt and eggs to make a firm dough.

2 Fry diced bacon and chopped onion on fat until done according to your taste. Then mix with little bit of breadcrumbs.

3 Roll out the dough and cut into a squares ( aprox 7x7 cm). Spoon little of mixture with bacon on each square in the middle and stick corners together to get a round shaped dumpling.

4 Cook dumplings in a boiling water for about 10 minutes ( it is better to try only one first )

5 Drain and serve sprinkled with breadcrumbs fried on fat. Pour over some extra fat.

You can serve this with cabbage or make different filling for example broccoli or other types of meat.
