clarified butter
Ghee is a very important part of Indian cuisine.Originally it´s made from buffalo milk, but very hard to find outside of India so there is a recipe variation for you to prepare other Indian food that requires this ingredient.
1 Place the butter ( should be unsalted ) in a pan. Leave it on a low heat for about half an hour to melt. Butter can not boil.
2 Strain the melted butter through clean cloth so you get clear liquid.
This is just a substitute for a real Ghee. Some of a food lover from India recommend to let the butter sputter little bit to get nutty flavour.
As far as I know this recipe was used 100 years ago in Europe by our grandmothers. ( butterschmalz in Germany or šmolc in Czech republic )
