Pineapple Flambe
INGREDIENTS:
1 large, ripe pineapple
40g/ 1 1/2oz/ 3 tbsp unsalted butter
40g/ 1 1/2oz/ 3 tbsp brown sugar
60ml/ 4 tbsp fresh orange juice
30ml/ 2 tbsp brandy or vodka
25g/ 1oz/ 2 tbsp slivered almonds, toasted
1 Cut away the top and base of the pineapple. Then cut down the sides, removing all the dark eyes but leaving the pineapple in a good shape.
2 Cut the pineapple into thin slices and with an apple corer remove the hard central core.
3 In a large frying pan melt the butter, sugar and orange juice. Add the pineapple slices and cook for about 1-2 minutes, turning once.
4 Add the brandy or vodka and light with a match immediately. Let the flames die down and then sprinkle with the almonds and serve with ice cream or thick yogurt.
