Eggplant Caviar

Great and easy party foodGreat and easy party food.

INGREDIENTS:

2 eggplants
2 tomatoes
1 spring onion
1 glass of olive oil
1/2 garlic clove
chopped parsley
salt and pepper  


1 Preheat the oven (gas 6). Bake eggplants for approximately 7 minutes. Turn several times during baking.

2 Peel tomatoes and remove seeds. Peel eggplants and dice. Chop spring onion. Press garlic.

3 Put tomatoes, eggplant, spring onion, garlic, salt and pepper into the bowl. Use mixer to make a puree. Add olive oil after a bit. 

4 sprinkle with parsley before serving
