Mexican Vegetables - Vegan
This mixture of vegetables and fruits is called Pico de Gallo.
2 tsp sunflower oil
1 red pepper (seedless) chopped
juice from 1 orange
juice from 1 lime
1-2 fresh red chilli peppers (seedless) chopped
200g carrot
1 cucumber
1/2 pineapple
1 mango
3 tbsp fresh chopped mint
1 Heat the oil on frying pan, add red pepper and fry on medium heat for 2 minutes. Add orange and lime juice and stew for another 5 minutes. Leave it to cool down little bit and then make a puree from it. Put the sauce in a bowl add chilli peppers, cover and place it in the fridge.
2 peel carrots and slice lengthways. Peel cucumber cut in half lengthways, use spoon to remove seeds and then slice it.
3 Peel pineapple and mango and slice it.
4 Place vegetables and fruits on plate, cover with kitchen foil and leave it to chill in fridge for 15 minutes.
5 Pour the sauce over vegetables and fruits, sprinkle mint and serve.
