Snow-capped Apples - Great Britain
INGREDIENTS:Serves 4
4 small cooking apples
90ml/6 tbsp orange marmalade or jam
2 egg whites
50g/2oz/4 tbsp caster sugar
1 Preheat the oven to 180C/350F/Gas 4. Core the baking apples and score through the skins around the middle with a small sharp knife.
2 Place in a wide ovenproof dish and spoon 15ml/1 tbsp marmalade into the centre of each. Cover and bake for 35-40 minutes, or until tender.
3 Whisk the egg whites in a large bowl until stiff enough to hold soft peaks. whisk in the sugar, then fold in the remaining marmalade.
4 Spoon the meringue over the apples, then return to the oven for 10-15 minutes, or until golden. Serve hot.
