Chinese Noodle Soup
1,25 l vegetable stock
2 tbsp light soy sauce
1 1/2 tsp whole saffron
4 spring onions
2 zucchini
2 big tomatoes
1 clove garlic
120g rice noodles
pepper
1 Place stock in a pot, add soy sauce and let it boil on medium heat
2 Use mortar to prepare saffron and add it to the stock with soy sauce
3 Slice spring onions and separate them to the circles, dice zucchini, peal tomatoes and chop them, chop garlic.
4 Add spring onions, zucchini, tomatoes, garlic and noodles to the stock and boil. Lower the heat and cover the pot. Boil for 5 minutes
5 Add pepper to taste, serve in preheated soup bowls, decorate with chopped chive
