French Onion Soup
serves6
450g/ 1 lb onions, very thinly sliced
500g/ 2oz butter or beef dripping
1 to 2 cloves garlic, crushed
1,2 l / 2pints really good beef stock
salt and pepper
Topping:
6 rounds French bread
50g/ 2oz Gruyere or other good cooking cheese, grated
1 Cut the onion slices into smaller pieces to make the soup easier to eat. Heat the butter or dripping in a pan and fry the onions and garlic until tender. Do not overcook. Add the stock and salt and pepper to taste.
2 Simmer the soup steadily for about 15 minutes, then adjust the seasoning.
3 Pour the soup into heated soup bowls and top with the French bread and the cheese.
