Swedish Apple Soup
450g/ 1 lb cooking apples
1 lemon
1,2 litres/ 2 pints water
50g/ 2oz sugar
15g/ 1/2oz arrowroot
little ground cinnamon
50g/ 2oz seedless raisins
1 Chop the apples into a small pieces, discarding the core and pips but do not peel as this gives additional flavour.
2 Place the apples in a pan. Pare the zest from lemon, add to the apples with most of the water and simmer to make a soft puree.
3 Rub the mixture through a sieve, removing the pieces of lemon rind. Return the puree to the saucepan with the sugar.
4 Blend the arrowroot with the remaining water, stir into the apple puree and continue stirring until the mixture thickens slightly.
5 Add the cinnamon and raisins to the hot mixture.
6 Leave the soup to cool and serve well chilled, add the lemon juice to taste.
