Scandinavian Fiskesuppe

INGREDIENTS:
Scandinavian Fiskesuppe Recipe
75g/ 3oz butter or margarine
1 medium leek, chopped
1 medium onion, chopped
1-2 celery sticks, chopped                
2 medium carrots, grated
40g/ 1 1/2oz flour
900ml/ 1 1/2pint fish stock
salt and cayenne pepper
3 tbsp brown sherry

1 Heat the butter or margarine in a saucepan, add the vegetables and cook over a low heat for about 10 minutes.

2 Stir in the flour and cook for 2 - 3 minutes, then gradually add the fish stock

3 Bring the soup slowly to the boil, stirring all the time, until thickened.

4 Add salt and pepper to taste with sherry and serve
