Cod With Mustard
50g/ 2oz butter or margarine
1 small onion, chopped
1 tbsp French mustard
pinch dry mustard powder
salt and pepper
50g/ 2oz soft breadcrumbs
4 cod steaks
Garnish:
cucumber slices
tomato slices
1 Heat 40g/ 1 1/2oz butter or margarine in a frying pan. Cook the onion until soft. Blend with the mustard, salt and pepper and breadcrumbs.
2 Put the cod into an ovenproof dish, top with the remaining butter then the mustard mixture. Do not cover the dish. Bake in the center of a moderately hot oven 190C/375F/gas5 for 30 minutes or until the topping is golden brown and the fish tender.
3 Add the cucumber and tomato slices for last few minutes cooking.
