Spanish Beef and Sausage Stew
450g/ 1 lb chuck steak, diced
salt and pepper
25g/ 1oz flour
1 1/2 tbsp oil
2 red peppers, deseeded and diced
2 medium onions, sliced
2 cloves garlic, crushed
3 medium tomatoes, sliced
300ml/ 1/2pint beef stock
150ml/ 1/4pint red wine
450g/ 1 lb small potatoes, scraped
175g/ 6oz chorizo or garlic sausage, sliced
1 Coat the meat in seasoned flour. Heat the oil in a pan and fry the meat for several minutes. Remove from the pan, add vegetables, fry for 5 minutes and stir well.
2 Return the meat to the pan and blend in the stock and wine. Stir as the liquid comes to the boil and thickens slightly. Add salt and pepper to taste.
3 Cover the pan and simmer gently for 1 1/2 hours. Add the potatoes, continue cooking for 25 - 30 minutes, then put in the chorizo or sausage and heat for 2-3 minutes only
