Apple Couscous Pudding

INGREDIENTS:
Apple Couscous Pudding - recipe
600ml/ 2 pints/ 2 1/2 cups apple juice
115g/ 4oz/ 2/3 cups couscous
40g/ 1 1/2oz/ 1/4 cup sultanas
2,5ml/ 1/2 tsp mixed spice
1 large Bramley cooking apple, peeled, cored              
and sliced
2 tbsp demerara sugar
natural low fat yogurt to serve

1 Preheat the oven to 200C/ 400F/ gas6. Place the apple juice, couscous, sultanas and spice in pan and bring to the boil, stirring. Cover and simmer for 10-12 minutes until all the free liquid is absorbed.

2 Spoon half the couscous mixture into a 1,2 litre/ 2 pint/ 5 cup oven-proof dish and top with half the apple slices. Top with the remaining couscous.

3 Arrange the remaining apple slices overlapping over the top and sprinkle with demerala sugar. Bake for 25-30 minutes or until golden brown. Serve hot with yogurt.
