Pickled Eggs
12 eggs
600ml /1pint brown malt vinegar
1-3 tsp pickling spices
1 Hard-boiled and shelled the eggs.
2 Boil the vinegar with the pickling spices. For very mild flavor, bring the vinegar just to boiling point and strain. For stronger taste, boil steadily for about 5 minutes then strain
3 Pack the eggs into jars, cover with the cold spiced vinegar and seal.
This is an unusual and interesting accompaniment to a cold buffet menu.
