Scotch Pancakes
100g/ 4oz self-raising flour
pinch salt
1 egg
scant 150ml/ 1/4pint milk
25g/ 1oz butter, melted
1 Blend the ingredients and beat until a smooth thick batter. Preheat and grease a griddle or base of strong frying pan.
2 Drop tablespoons or teaspoons of batter ( depending on size you required ) on to the hot surface. Cook for 1 to 2 minutes or until the surface is covered with bubbles, turn with a knife and cook for the same time on the second side or until firm to the touch.
3 Cover with a cloth on a wire cooling tray as the pancakes cool.
