Pork Ribs - Romania
600g pork chops
2 tbsp oil
2 tomatoes
4 green peppers
60g eggplant
garlic to taste
1 tsp plain flour
1 onion
salt
1 Tenderize and cut the meat.
2 Chop tomatoes, peppers, onion and eggplant.
3 Fry onion on 1 tbs oil, add grated garlic and rest of the vegetables. Add water and stew until soft.
4 Sprinkle with flour and add more water. Salt to taste and cook for a bit.
5 Spread oil on the pork chops and grill from both sides.
6 Serve with baked potatoes. Pour over the vegetables.
