Avgolemono Soup - Greece

Avgolemono Soup Recipe From GreeceINGREDIENTS:
1 liter strong chicken stock                           
50g rice
juice from 2 lemons
2 eggs
salt

1 Add rice into hot chicken stock. Salt to your taste and cook until rice is soft.

2 Beat the eggs with lemon juice. Start adding this into the stock in small portions, stirring all the time.

3 Once the stock and mixture are mixed well.

4 Leave it to cool down.

5 Stir well before serving with slices of lemon.
