Alpine Soup - Switzerland
2 liters beef stock
400g potatoes, diced
60g butter
60g spinach, chopped 60g beans
2 onions, chopped
2 carrots, chopped
1 radish, chopped
1 leek, chopped
60g macaroni, broken into small bits
0,5 liter milk
0,2 liter cream
30g chive, chopped
100g cheddar, grated
nutmeg powder
salt and pepper
1 Fry potatoes and vegetable on butter. Add beef stock.
2 Add beans ( dipped in water before and drain). Salt and pepper to your taste and cook for 1 hour.
3 Add milk and macaroni and cook for additional 15 minutes
4 Add pinch of nutmeg, salt and pepper if necessary.
5 Add cheddar, cream and sprinkle with chive.
6 Serve with bread.
