Sweet And Sour Soup With Prawns - Thailand
INGREDIENTS:
3 spring onions
2 tbsp coriander leaves
1 green chilli pepper, chopped 3 stalks lemon grass
1 tsp lemon rind
500g prawns, peeled
coriander leaves and spring onion to serve, chopped
1 Place everything into the deep pan apart from prawns and cook on low heat for 20 minutes.
2 Strain. Return water into the pan and cook prawns for 1-2 minutes.
3 Pour soup into the bowls and sprinkle with coriander and spring onion.
