Chicken Breast With Apricot Sauce - Wok Recipe
INGREDIENTS:
4 cm ginger, peeled and finely chopped
1 shallot, finely chopped
1 clove of garlic, finely chopped
3 tbsp of light sesame oil
6 tbsp light soy sauce
1 citronella, finely chopped
1/2 tsp sambal oelek ( chilli paste )
2 tbsp lime juice
4 spring onions, sliced
4 tbsp apricot jam
2-3 tbsp oil
1 Mix half of ginger with garlic, sesame oil and 3 tbsp of soy sauce. Add citronella.
2 Add chicken breasts and stir well. Leave it in a fridge over night.
3 Mix chilli paste with rest of ginger , soy sauce and lime juice. Add spring onions and apricot jam. Stir well.
4 Fry chicken breasts in a wok on hot oil. Stir all the time. When nearly done. Sprinkle with marinade from chilli paste.
5 Serve with marinade from chilli paste.
