Avocado Soup
2 ripe avocados
2 tbsp lemon juice
600ml/ 1pint chicken or vegetable stock 300ml/ 1/2pint yogurt
salt and pepper
Garnish:
chopped chives
1 Halve and skin the avocados and chop the pulp. Put into a food processor with remaining ingredients and blend to a smooth puree.
2 Chill the soup well and top with chives just before serving
