Greek Cinnamon Chicken
2 cloves garlic, crushed
salt and pepper
4 chicken joints
1 tbsp olive oil
1 tsp ground cinnamon
8 medium tomatoes, thinly sliced
100g/ 4oz black olives, chopped
2 oranges, thinly sliced
1 lemon, thinly sliced
150ml/ 1/4pint dry white wine
1 Press the garlic, salt and pepper into the chicken joints. Blend the oil with the ground cinnamon and brush the chicken with this, using all the oil.
2 Place the chicken in a casserole. Top with the sliced tomatoes and olives. Remove all the pips from the sliced oranges and lemon. Place over the tomatoes and olives, add the wine.
3 Cover the dish and cook in the centre of a moderate oven 180C/ 350F/ gas4 for 1 1/4 hours
4 serve with pasta
