Turkish Beans
450g/ 1 lb green beans
salt and pepper
2 tbsp olive oil
2 cloves garlic, crushed
2 medium onions, sliced
1 green pepper,cored,seeded and diced
3 large tomatoes, skinned and sliced
2 tbsp chopped parsley
1 Prepare and cook the beans in salted water, strain thoroughly.
2 Meanwhile heat the oil in a pan and fry garlic, onions, pepper and tomatoes until just tender
3 Blend with the beans and chopped parsley. Season well
