Chicken With Eggplant - Macedonia
INGREDIENTS:
500g eggplant, peeled and sliced
8 tomatoes, sliced
4 peppers, seedless and diced
4 onions, finely chopped
1 liter stock
parsley, chopped
1 Salt the chicken portions according to your taste and fry from all sides.
2 Add pepper, onions and stock. Cook on small heat until chicken is soft.
3 Place chicken in a baking dish, add eggplant and tomatoes and bake until golden brown.
4 Serve sprinkled with chopped parsley
