Mushroom Caviar - Russia
500g fresh mushrooms, finely chopped
2 onions, finely chopped
2 cloves garlic, crushed
juice from 1 lemon
2 tbsp cooking fat
chive, chopped
pepper and salt
1 Fry mushrooms on cooking fat in pan for short amount of time.
2 Add onion fried separately and cook until mushrooms are soft. Leave mixture to cool.
3 Use food processor to make fine mixture. Add garlic, lemon juice and salt and pepper to taste.
4 Serve sprinkled with chive
