Melon Soup - Mediterranean
1 ripe yellow melon
6dl water
1 spring onion, chopped
1 tbsp olive oil
50g cream
fresh coriander, chopped
salt and red pepper
1 Use spoon to make several balls from melon, dice the rest.
2 Boil the water then add salt and pepper. Add diced melon ( not melon balls) and cook for 8-9 minutes.
3 Fry onion on oil until golden brown, then add to the soup. Leave it to cool down.
4 Use food processor to make a smooth mixture. Add the cream and cook on low heat until thicken. Use food processor again.
5 When soup is cool down to room temperature place it in the fridge.
6 Serve in the bowls with melon balls, sprinkled with coriander.
