Fried Herrings In Oatmeal - Scotland

INGREDIENTS:
Fried Herrings In Oatmeal Recipe From Scotland4 herrings, cleaned, removed heads, dry
50g fine or medium oatmeals or rolled oats                               
salt and pepper
25-50g cooking fat
lemon wedges

1 Bone the fish and flatten

2 Blend the oatmeal with salt and pepper and use it to coat the fish.

3 Heat the fat in a pan and fry the fish quickly on both sides to brown.

4 Lower the heat and fry gently for a few minutes until tender.

5 Garnish with thick lemon wedges.
